Bin 2 was first released in 1960, yet was discontinued in Australia in the 1970s at the height of the white wine boom. The original Bin 2 was an 'Australian Burgundy' style (despite its Rhône varieties) - typically a soft, medium-bodied wine based on Shiraz. The Bin 2 blend of Shiraz and Mataro is still relatively uncommon in Australian table wines. Also known as Monastrell or Mourvèdre, Mataro was introduced to Australia in the 1830s. Sometimes used in fortified wine production, this grape is widely planted in the Barossa Valley. It is greatly valued by winemakers for its blending attributes, adding complexity and palate grip.

The climate of the Barossa Valley is not dissimilar to the warm, dry regions of Europe where the origins of the Grenache can be traced. The region is held in very high regard for this varietal and boasts some of the oldest vines in Australia. Bin 389 is often referred to as 'Baby Grange', in part because components of the wine are matured in the same barrels that held the previous vintage of Grange. Launched with the 1990 vintage in 1993, Bin 407 was developed in response to the increasing availability of high-quality Cabernet Sauvignon fruit. Inspired by Bin 707, Bin 407 offers varietal definition and approachability, yet still possessing structure and rich depth of flavour. Textbook cabernet sauvignon, the expressive Bin 407 demonstrates the reward of Penfolds multi-regional blending philosophy. A core of ripe fruit is well supported by sensitive use of French and American oak. After the aromatic impression, one might expect a forbidding palate. Not so. It's remarkably approachable, yet clearly built for a long spell in the dungeon. The cool dark fruits are very concentrated and varietal. The leafy notes on the nose morph into char-grilled savoury flavours of grilled capsicum and cumin spiced eggplant, infused by sandalwood and cherry wood smoke. The tannins are graphite-like, fine but reassuringly persistent, with a faint suggestion of bitter dark chocolate. At the time of tasting the wine is very energetic, dancing the tango at full tempo. Don't expect a slow waltz anytime soon. One for the long haul.

A first impression reveals that this release is not overtly fruit-dependent, although blackberry and mulberry fruits are instantly detected. Perhaps more of a savoury/earthy disposition, augmented by pan juices/jus and black olive, and laced with exotic spices (African/Moroccan)... turmeric, bay leaf and pimento. Temptingly, (couverture) dark chocolate crackle/Copha flavours combine with the praline and nuttiness of barrel-fermentation. An expansive, woven palate conveys this vinous deliciousness, with a positive tension assisted by seamless Cabernet tannins, that are at once granular, sleek. Structure and flavours are both sophisticated and complex... masterfully conjured and showcased via this noble variety, Cabernet Sauvignon.
